The Guadalajara Book Fair was held from May 13 to 16, 2021, in the context of which on May 14 took place the presentation of the new publications of the University of Alcalá publishing house, including the book Estrategias avanzadas para la mejora de la calidad, la seguridad y la funcionalidad de los alimentos, edited by Drs. María Luisa Marina Alegre, María Castro Puyana and Merichel Plaza del Moral, researchers of the University of Alcalá and members of the AVANSECAL-II-CM Program, with the participation as authors of researchers of the Program belonging to other universities (Universidad Complutense de Madrid, UNED, Universidad Rey Juan Carlos) and Consejo Superior de Investigaciones Científicas (Instituto de Ciencia y Tecnología de Alimentos y Nutrición (ICTAN) and Instituto de Química Orgánica General). This book gathers part of the results obtained by the researchers participating in the Program in order to make available to all interested parties the advances achieved within the Program’s thematic area.
